Emily McCune
Born and raised in Riverside, California, head pastry chef and owner Emily McCune traveled and lived all over the country before moving to Minnesota and calling Fergus Falls home in 2011. With baking memories as far back as five years old, Emily has been baking her whole life, learning her first shortcake biscuit at 10 years old from her uncle Johnny. Emily started her first professional bakery business in 2020, Sugar High Bakery and Confections, but her travels to France in 2023 and Spain in 2024 inspired her to bring home a taste of the traditional neighborhood pâtisserie to Fergus Falls. She enrolled in the Baking and Pastry program with Auguste Escoffier School of Culinary Arts in 2024 and, combined with her background in Sustainable Food Production and Agriculture and a new Associate’s Degree in Professional Pastry Arts, Emily married her two biggest passions in 2026 to open Coquette, our region’s first farm-to-table French Pâtisserie.
When she isn’t baking, Emily enjoys running, working out, cooking, international travel, live music, trivia, board games with her family, napping, movies, reading, hiking, and spending time with her cats, Cleo and Peanut. She is very active in her recovery community and celebrated seven years clean in 2026.

Chloe
Meet Chloe! Chloe is a high school senior at Underwood and is very involved with school activities and sports, including volleyball, golf, art, BPA, show choir, choir, band, and theatre. She is excited to work at Coquette for the opportunity to be a part of something brand new in Fergus Falls, to work with an amazing group of women, and to learn some new skills!

Bianca
Meet Bianca! Originally from Eugene, Oregon, Bianca has lived in Fergus Falls since 2025. Having baked at home for a long time, she is excited to step into a professional kitchen and expand her skills. Bianca is passionate about local foods and sustainability, so she is super excited to work at Coquette. In her free time, she enjoys cooking, traveling, spending time outside, reading, and soccer.

Sophia
Meet Sophia! Sophia is from Fergus Falls and is currently studying Criminal Justice with a minor in Legal Studies at UND. She comes to us with 3+ years of experience in coffee/espresso and is excited to be a part of Coquette because she loves everything pink, feminine, and fun - so we all know this is a great fit! Sophia enjoys doing her nails, shopping, spending lots of time with my friends and family, and (of course) coming up with fun coffee recipes!

Hayleigh
Meet Hayleigh! Hayleigh was born in Fergus Falls and began baking and cooking at the age of 12 alongside her grandmother (Oma), who shared her passion for food and helped inspire her early interest in the kitchen. Although she has primarily worked in healthcare up until this point, Hayleigh is excited to transition her love of baking into a professional career with Coquette as our full-time apprentice. Outside of baking she enjoys reading, painting, spending time with her family, and collecting plants. She loves being outdoors gardening, hiking, camping, fishing, and swimming and has a strong love for animals, sharing her home with three cats (Quimby, Marley, and Sunny) and her dog Maverick.

Madison
Meet Madison! Madison is from Fergus Falls and, in 2025, graduated with a B.S. in Family Studies. She is pursuing her Masters Degree in Marriage and Family Therapy at Syracuse University in New York in Fall, 2026. She loves to travel and recently returned from a trip to Poland where she was honored for her service with the Auschwitz Museum. She loves sewing, baking, spending time with her family, and kayaking. Madison is eager to be part of the Coquette team because she fell in love with French pastries in Paris and is very excited to get to help bring them to Fergus Falls!

Havanna
Meet Havanna! Havanna grew up in Fergus Falls and is excited to be a part of the Coquette barista/customer service team and work in such a unique, upbeat and community-focused environment. Outside of work, she enjoys seeing her favorite artists in concert, spending time on the bike trail, the beach, exploring the Prairie Wetlands Learning Center, and just being anywhere she can feel the sunshine on her face.
